Not Another Resolution....

.... These last few days before the new year I have been thinking a lot about the past year and all the blessings that it has brought.... I've been thinking about the future and the kind of person and mother I truly want to be. That being said I have a lot of goals (personal, professional and emotional) that I want to achieve, not just for myself, but for my family...... So this "New Year" for me is not about "resolutions".... It's about a new beginning. I know I said this last year being 4 months pregnant with my beautiful baby boy, but this year it has new meaning. I want to become a better mother, daughter, aunt, cousin, friend and a better over all human being.... It will not happen over night or even in a few months, but I vow that it will happen.... Let the journey begin.... Bring it!

My Pinterest Ornament

 I adore Pinterest if you haven't noticed. So I decided to make an ornament to give to my fellow Pinterest addicts for Christmas and they loved it! Such a simple and easy gift. All I did was paint a clear plastic bulb ornament I found at Michael's and then stuffed it with white paper shred from Party City. I saw the quote on Pinterest and decided to use it for the back of the ornament. Cute right? Of course I had to make one for myself. Sad Day in Conneticut....

During this time of joy and laughter comes a horrifying tragedy... My heart goes out to the families and friends of all those in New Town...just a few short miles from my own home... I can not fathom how a person and kill innocent children.... Today I pray for all the lives lost and pray for the hope and future of our children...
May God bless us and keep us all.

Our Tree & Eggnog Pound Cake....

Happy Sunday all.... This year we decided to go with a little smaller tree than usual. Gracie and I fell in love with this little guy so we brought him home. We couldn't fit all our ornaments but it is a cozy little thing.....

 
I was feeling very festive today decorating the tree, finishing up some ornaments and listening to Christmas music that I decided to bake some eggnog pound cake.
 
Eggnog Pound Cake
3 cups flour, sifted
2tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
1/8 tsp cinnamon
8 oz (2 sticks) unsalted butter at room temp
2 cups granulated sugar
3 large eggs
1 cup eggnog (I used sugar cookie flavor)
1 tsp vanilla extract
pre heat oven to 350 degrees
 
Sift together flour, baking powder, salt, nutmeg & cinnamon.
Beat the butter in a bowl of a stand mixer until creamy and smooth (about 1 min). Slowly add the sugar and beat on medium speed until light and fluffy, about 5 min. Add eggs on at a time and mix well after each addition. Turn mixer on low speed and add flour mixture in three additions, alternating with eggnog and vanilla. Mix on low speed until completely incorporated. Spoon batter into a bunt pan, tube pan or two loaf pans.
Bake at 350 for 55 to 65 minutes (I baked for 55min and it was perfect).
Dust with confection sugar and serve warm with vanilla ice cream!

Hi all.... once again daily life has taken up most of my time, but today is a very special day. Not only is it one day closer to my favorite holiday (23 days, 11 hours and 45 minutes to be exact) Christmas, but today we are heading into NYC to check out the tree at Rockefeller Center and stroll by all  the fabulous store windows!
